Zucchini slice


Zucchini Slice.

It's been a rainy summer in my home town on the Barrington Coast of Australia and most people have had a bountiful crop of zucchinis. What to do with them all! (assuming you’ve managed to harvest before the rain really set in!). Rainy days are perfect for baking!


This humble recipe provides a balanced meal which can be enjoyed hot or cold and is great “to-go” food. It’s packed with protein and pairs well with salad, veg, and brown rice or spuds. The turmeric possesses antioxidants – to protect cells from damage, *add black pepper to turmeric to ensure the curcumin benefits are realized.


This slice is healthy and easy to make. Whilst zucchini isn’t as rich in nutrition as other veggies, they contain a wide range of vitamins and minerals. They’re a good source vitamin A, which is essential for eye health and good immune function.


Ingredients:

3 zucchinis (grated and moisture squeezed out)

1 large carrot (grated)

1 cup whole-meal SR flour (*use any flour of choice)

6 eggs

½ cup-1 cup finely chopped spinach and rocket/fresh herbs

1.5 cups grated cheese

1 onion

2-3 cloves garlic

Seasoning/mixed dried herbs

1-2 teaspoons turmeric

Method:

Pre-heat oven to 180 degrees.

Crack 6 eggs into a bowl. Add the turmeric, salt & pepper.

Grate the zucchini. Squeeze out the moisture, over a sieve and by rolling in a clean tea towel.

Gently sauté the onion and garlic until softened, add the chopped leafy greens and cook for a few mins.

Add all the ingredients to the bowl with the eggs, mix well.

Pour into a lined ceramic baking dish and bake for approx 35-40 mins


TIPS:

Squeezing the moisture out of the zucchinis, stops the slice being soggy

I used an ancient grain whole meal flour, so it didn’t rise but was still good

Experiment with buckwheat or other whole-grain gluten-free flours.

Sprinkle almond meal on top for extra protein & omegas.

Pack in the fresh leafy greens/herbs, for essential minerals such as folate and iron.

Resist adding bacon or ham, since the palate can get too used to the salty flavour!
