Falafels- sweet potato. gluten free. vegan

These sweet potato falafels are fabulous vegan food, which also pairs with meat or any salads. They are super easy to make, nutritious and versatile.

These cute patties have plenty of fibre to feed your good gut bugs & keep them healthy & abundant.

Chick peas are packed with protein & carbohydrates and are a good source of iron too.

If you have a vegan or vegetarian in the family, keep a few in the freezer.


*I always soak my canned chick peas, it further breaks down nutrients to improve uptake into the body. Look for cans in which the lining is BPA free and the chickpeas are non GMO.

*everything goes into the food processor - so easy.



Recipe:


Ingredients:

  • 2 cups boiled sweet potato (cooled) - or use frozen sweet spud chunks

  • 1 can chickpeas (drained & soaked)

  • 2 large cloves garlic, peeled

  • 1 small onion - chopped into quarters

  • 1 cup cilantro and/or rocket

  • 1 spoonful's flax meal

  • 2 teasp cumin

  • 1 teasp turmeric

  • sea salt

  • black pepper

  • 2 teasp chili powder (optional)

  • olive oil to drizzle after serving (*not before cooking, the heating spoils the olive oil's properties)

  • extra lemon quarters to squeeze on when serving

  • Roll in some hemp seeds for extra omegas (optional)

Place all the ingredients in the food processor, then shape into patties and bake in the oven for around 35 mins at 380f/190c


Dressing:

I just used natural (grass-fed) yoghurt, with chopped cucumber & some dill however...




When you have more time...

  • 1 cup Greek yoghurt (grass fed)

  • 1-2 teaspoons lemon juice

  • 1/4 fresh dill

  • 2 cloves garlic

  • ground salt & black pepper as desired

  • 1/2 cucumber - diced.

Or buy good quality hummus, with simple, real ingredients and no additives. Make sure it is made with olive oil.




We enjoy about 4-5 falafels each, with hummus, yoghurt & a simple salad of lettuce, rocket & coriander plus some blanched broccoli tossed with olive oil & hemp seeds.

Drizzle more extra virgin olive oil across the meal for extra benefits. Olive oil is magic for reducing bad cholesterol, being anti-inflammatory & transporting fat-soluble vitamins.
