Cashew Cream desert - Happy Easter everyone🐰 xox

After publishing the blog about cashew cream, I was inspired to create this yummy Easter treat: Cashew cream desert.

This creamy mixture is delicious in smoothies or a couple of teaspoons on muesli.

The subtle flavour from a beautiful ripe Beurre Bosc pear, is the perfect pairing to this rich cream...

Have fun playing around with the presentation.... remember, it's rich! A tiny amount is all it takes to tantalize the taste-buds.

Chocolate cashew cream recipe:

  • 1 1/2 cups of cashews (soaked for several hours with water). Then rinse & drain.

  • 1 1/5 cups fresh water - blend the nuts well with the fresh water.

  • Couple of grinds of salt.

  • 1-2 tablespoons of cocoa or cacao (cocoa may have added sugar, cacao comes from fermented beans which have not been roasted, and so are a healthier option)

  • 200 mls coconut cream. Note: If using coconut milk, use less water.

  • 1 tablespoon dark chocolate shavings/drinking chocolate type. - room temp

  • 1/2 teaspoon cinnamon

  • 1-2 teaspoons pure vanilla essence

Blend everything together. Decorate with chocolates & fruits as desired.


  • The mixture was fairy runny, like a custard. I only had a nutribullet handy, which requires a reasonable amount of liquid.

  • Vary the recipe by using almond milk or less coconut cream & difference spices, or using only the cashew cream.

  • Note - if using tinned coconut milk or cream, check the label states "BPA" free lining.

  • You can play around with the proportions, spices & cacao.

  • I kept adding small amounts of cocoa, cinnamon & liquid, 'til I was happy with the flavour and consistency. I prefer less sweet flavours.

  • This cream is rich and filling, however not sweet, which pairs well with a couple of chocolate treats and fruits.

  • Serve tiny bowls - it's all you need!
