Broccoli, apple & spinach soup. One pot cooking.

Broccoli is a superhero when it comes to nourishment. It is a good source of fibre and carbohydrates, and is rich in vitamins, including folate (B9). Broccoli, and other brassica veggies, help to reduce inflammation in the body and keep blood sugar stable.

Brassica (or cruciferous vegetables) contain compounds, glucosinolates, which help combat cancer.

BROCCOLI SOUP


Ingredients:

  • 1 medium broccoli head

  • 1 large onion

  • 1 small zucchini

  • 1 cup diced and peel apple (2 medium or large apples)

  • 5 cups baby spinach

  • 4 cups vegetable stock or real chicken bone broth (from pasture-raised chooks)

  • 1 tablespoon chopped fresh ginger

  • 3 garlic cloves

  • 4 shallots/scallions

  • 1 tsp rock salt

  • 2 tablespoons EVOO

  • ground black pepper to taste.




Broccoli is slightly bitter, so onion and apples are the perfect foil in this soup. Apples and onions contain prebiotics too, which great fuel for our beneficial gut bacteria. Along with garlic and ginger, this soup is a big immune booster.



What to do:


  • Sautee the onion in the olive oil with half the salt. Cook for two to three minutes, stirring.

  • Stir in the garlic and ginger and cook for 30 seconds until fragrant.

  • Add the broccoli, zucchini, shallots, and apple to the pot, mix well

  • Pour in the broth and the remaining salt

  • cover and cook for one minute

  • Add the spinach and stir until the spinach has wilted

  • Cool slightly and blend. I use a stick blender.

  • Serve with pepper and choice of toppings: cashew cream, yoghurt, cheese.
